Right at this moment in time, I’m in the “loving and healing my gut” mindset.

 

Basically, I’ve been following the AIP diet since the beginning of May this year, and even though I’ve definitely felt the positive benefits of it, I have also been dealing with a few set-backs due to gut inflammation.  Why and how this is happening, I may never know, but I’m on a mission.

IQS + Florentine Biscuits

 

Florentines.  As a child, no other biscuit made me feel more like a gown up than this one did.  Typically stuffed full of glace cherries, nuts, sugar and chocolate, they were my biscuit of choice when I wanted to impress (and I got to scoff all the leftovers).  Win/win.

 

When I said goodbye to the white stuff a few years ago, I also tearfully said au revoir to the super sweet florentine.

 

And then the angels sang. As inside the pages of the I Quit Sugar Chocolate Cookbook Volume II, this little Superfood Florentine recipe jumped out and waved it's little muscly arms at me.  Oh sweet Lord.  Thank you, thank you, thank you!

If you’ve been following my adventures on Instagram, you’ll know I’ve been frolicking in France for the past month.  Spending my days walking for miles and eating my body weight in French food.

 

Now I’m back. 

 

Well, my physical body is anyway.

 

I set out on this latest holiday with an open mind (and heart), knowing that France does not lead the world in gluten, sugar and dairy free food options (baguettes, French butter and fromage…hello!).  Surprisingly, they are definitely growing in this area, something I had never noticed on my past visits.

Beets + Thyroid

I truly believe that healing your body requires more than simply taking a few pills or herbs.  I believe it requires a complete overhaul of your body, mind and spirit.  

 

When it was first discovered that I had a thyroid issue, I was automatically put on conventional pharmaceutical thyroid medication by my doctor, and at the time, I felt sooo much better.  The swelling in my thyroid went down and the symptoms disappeared.  To be honest with you, at the time, I thought that was it.  Done and dusted.  I was fine.

 

And then a year later the symptoms all came back.  Tenfold!

Butter !

Mmmmm....butter.  I'm licking my lips as I write the word.

It's probably my favourite food word.....oh who am I kidding, it's one of my favourite words.  Full stop!

It is a completely natural food which is essential to your health (especially when you eat organic), providing your body with essential fatty acids for hormone balance, heart health, glowing skin and energy.  It's also the most  easily absorbable source of vitamin A, which supports the thyroid and adrenal glands - something very close to my heart.

Margarine, on the other hand, is a processed product, created chemically from refined polyunsaturated oils. It's not a real food.

Poisson Meuniere

Yes.  Another recipe from the cookbook I have fallen head over heals for.

I hope you're not bored yet, cause there is a lot more coming.

Each time I think I'll flick through another cookbook, I find I get a couple of pages in and then suddenly, low and behold, it's back in my hot little fingers once again.

I guess I can't really call it a "crush" anymore as I think we've moved more into "stalker" territory now.
