AIP Cookbook Review + Pork Chops

When I initially started on this AIP pathway of mine – I’ll admit that I lost a little part of me.  My joy of cooking.  I was overwhelmed with the changes and “strictness” of the protocol, and my “feeling sorry for myself” attitude didn’t help matters.  However, finding this website and purchasing this book gave me back that little piece of joy I was missing.  It made me want to skip back into my kitchen and play, and in fact that first night I brought it home, I couldn’t wait to hit the shops and pick up the ingredients ……

Say hello to Sarah!

Sarah loves to bake (like me).   She is from Ontario, Canada (a country I hope to one day see soon, and a country where my niece Miss B is studying at university....well, she says she's studying...hehe).  Sarah fully admits to being a comfort eater (like me too!), and is the lovely lady behind the blog Things I Make for Dinnera place where she keeps weekly menu plans and showcases her newly tried recipes.

I love that Sarah and her husband lose weight and save money by cooking and eating at home (this made me laugh Sarah) and what put a big smile on my face is that she adores French food (ME TOO!!)  Things I Make for Dinner is my Secret Recipe blog for the month of October, and my recipe this month is a long-time favourite, yet one I rarely cook myself.  That's all changed now....

Pink Peppercorns !

Pink Peppercorns.

Did you know that they're  not actually a true peppercorn?  Just a little ripe berry from the Brazilian pepper tree.  Who knew?

With a delicate, fragrant, sweet and spicy flavor, reminiscent of sweet berries and citrus zest.

They can help fight against flu, colds and infections, and can also give relief from muscle stiffness and aches.

Sounds like I could use a truck full of these little biddy beauties after every Wednesday's pilates class.

Beef Champvallon !

Champvallon.

A rustic yet still fairly elegant dish which dates back to the reign of Louis XIV, supposedly invented by one of his mistresses.  Where the name itself comes from,  there seems to be no clear answer.  Perhaps from the tiny little French village Champvallon located in the region of Bourgogne, or perhaps named after the archbishop of Paris during Louis XIV's reign, Francoi de Harley de Champvallon?

Whatever the answer, this is a lovely little dish to have bubbling away in your oven while the rain falls outside and while you sip a well deserved glass of red.

Chicken + Red Wine !

It's as simple as it sounds.  Chicken, red wine and just the one pot.  Oh...and a little love.

I love the shift to Winter my mind, body and routine takes.  Bit by bit, slowing down.  Not completely, as that would be too good to be true, but just enough to notice.  I seem to take longer over my morning latte.  I'm in bed earlier.  The food in my kitchen cooks for longer.

This dish is not the true coq au vin.  However, it is chicken slow cooked in red wine and I did use French wine, so I'm still going to say it's somewhat French.  Perhaps French inspired?

Spinach

In the weeks since 2015 began, I've been delving further into and experimenting with foods that detoxify, help alkalise my body, strengthen my immune system and provide me with much needed energy, and the humble spinach leaf, I've discovered, is just one of those ways.  It's also cheap, natural and readily available (unless of course you live close to those wonderful Nonna's baking their spinach and cheese pies, who buy up all of the spinach, which happened to me on the weekend.  Doh!).

So my present to your body today......a simple slow cooked dish packed full of this miracle of a vegetable.....

Fear of Fish !

I have a love/hate relationship with fish.  I adore eating it and it's often my first choice when eating out, as it's a food I often crave, especially a thick white fluffy piece cooked to perfection and eaten on a warm Summer's afternoon - think crisp white wine, billowing  lace curtains and Nina Simone in the background and you have my idea of heaven.  My problem....I don't like cooking it.

Actually, I'm petrified of cooking it.

How great is fennel for you ?

Fennel:   You're either a lover or a hater.  I'm a devoted lover and have been for a very long time, and as I've been slowly learning about the health benefits of this brilliant veg...I'm even more head over heels in love.

Not only does it help in the relief of indigestion, flatulence and constipation, it's also brilliant in the treatment of anemia.....something that my mum is currently experiencing .  Not only is fennel high in iron, but the amino acid (known as histidine) found in fennel helps stimulate the production of hemoglobin.

So from me to you mum....it's cooked and packaged up ready for delivery.....

The Provencal Ratatouille !

When I see the word Ratatouille, it instantly conjours up pictures of Summertime in Southern France.  Think the Mediterranean shoreline, a bright blazing sun and warm blue waters.

Ratatouille (a Provencal ragout of vegetables)  is one of those infamous recipes that everyone in France makes slightly different, and everyone else's recipe is wrong.  The French would cringe seeing this interpretation, but I LOVE it.  Even thought this version may not conjour those warm Summer months, it makes me think of cosy Winter nights rugged up under a blanket in front of a roaring fire.  Perfect for Winter in Melbourne!

Super Simple Mid-Week Meal

If you're looking for a super simple and super quick recipe, then look no further.

I've made this dish a number of times after first discovering it on The Stone Soup Website, and the brilliance of this dish (well, I think so anyway) is that any extra can be frozen and whipped out when needed for an even quicker mid-week meal.  The chicken can be flaked off the bone and along with the capsicum, tossed through some quinoa or pasta, or you could even package it up and eat cold on a picnic.

Did I mention it only has 3 ingredients?

Did I mention how super simple it was?

SRC | Chicken Pot Pie

I'd like to introduce you to Sarah, the brains behind The Pajama Chef.  I love that Sarah learnt to bake cookies at her grandma's knee (very envious) and I love that she would wear pajamas all day, every day if she could.  A girl after my own heart.  I also love that Sarah is my secret blog for this month's Secret Recipe Club.

Choosing this month's recipe was a toss up.  I was craving her Cilantro/Lime Hummus, but then I saw three little words that for some unknown reason make me smile, clap my hands and wiggle my bum at the same time every time.

Organic Chicken?

Are you a "free-range" chicken or an "organic" chicken buyer?

Once upon a time, if I'm being honest with you, I was not concerned about either.  Now, I'm obsessed for healthy, sustainable food.  I've increased my awareness about what we are eating and where it has come from to the point that I can't turn back or pretend I know nothing about it.

Now, I'm organic all the way!

A dish stuffed full of greens . . .

Phew...a lot has been happening in my little world of late.

For one thing, I just moved house this past weekend.  I've only moved 5 minutes away, but my new home has air-conditioning.....hallelujah!

On top of all the packing, culling and cleaning amidst the 30-40 degree heat we've been experiencing, in a non-air-conditioned house (feeling sorry for me yet?), I've not been well.  So my packing has been interrupted with little naps on the couch and lots of moaning.

So needless to say I have been shoveling anything green into my mouth for the past few weeks in the form of juices, salads and dinners stuffed full of vegetables, and this little flavour packed dish has been one of my absolute favourites!

What food do I love to cook ?

Being someone who lives and breathes recipes and food, I'm often asked what my favourite type of food is to cook.  Funnily enough, it's not the easiest question for me to answer as it completely depends on the season, time of day and of course, my mood.

If it's a mid-week meal during Summer, I love nothing better than experimenting with salads, and at the moment it's the ones that contain lentils that have me drooling.

A lazy weekend on a cooler day, I can guarantee you that my oven will be on and something yummy and soothing will be inside bubbling away.

However, there seems to be a few common links that bring most of the food that I love to cook together:

1.  Simplicity

2.  Fresh, organic produce

3.  A tilt towards French flavours

Case in point below.....

Chicken with Hummus

Would you believe that once upon a time I was a vegetarian.  I actually forget this little fact about myself as I'm now such a lover of meat.  Smoother a perfectly grilled piece of steak in bernaise sauce and I'm your friend for life.

However for many years I would turn my nose up to any and all meat.

These days, I tend to eat red meat maybe 2 times a week, however chicken is steadily getting a more regular apearance in my diet.  Always concerned about dry, tasteless chicken, I'm constantly on the lookout for new recipes.  Quick, simple and tasty new recipes actually, and here's one I think you might like...I did!
