As I sit down to write this post (still curled up in bed, I might add), I've officially been on the Autoimmune Paleo Protocol (AIP) for 2 whole months.  Unsure what I'm talking about, check out my previous posts here.

 

Basically, I've taken my diet to a whole other level because of how my body has been feeling lately.  I take specific supplements due to deficiencies, I see a Hashimoto Holistic practitioner regularly and I've removed many inflammatory causing foods from my diet over the years (gluten, grains, cows milk dairy and refined sugars).  Even though I was feeling so much better from doing all of the above, I still hadn't felt great - my GP tells me that there is nothing I can do.

 

My head, heart (and the Taurean inside of me) tells me otherwise.

 

To help boost my nutrient density - I've added a new little toy - Gelatin.

 

As you may be aware, I've been consuming bone-broth for my gut health on and off for a little while now, but I've upped the ante.  Specifically, I've started to use the Great Lakes Beef Gelatin (in the orange can), which is as its name suggests, an unflavoured grass-fed beef gelatin.

 

I've added it into my bone-broth, which is quietly simmering away on the stove.  Bone broth on its own is rich in collagen - wonderful for maintaining healthy joints, skin and hair, and a brilliant source of gelatin - great for gut-healing and perfect for those of us dealing with the effects of Hashimoto's, or most autoimmune diseases.

 

To make:

 

Use any grass-fed (if possible) bones you can get your hands on - poultry beef, lamb, pork or fish - leftovers from chops and chicken carcasses are what I use (I store them in the freezer until I'm ready).  Add any vegetables or herbs for flavour - most days I keep it super simple with just some apple cider vinegar and bay leaves.  Strain.  The resulting broth will be rich in vitamins, minerals and antioxidants, including calcium, magnesium, and phosphorus as well as glycine.  

 

Today, as I was a little low on bones - I added my Great Lakes Gelatin for a little gut healing boost.
