Secret Recipe Club - March

Say hola to Leslie!

A born and bred Southern Californian, however for the past 14 years has called Mexico home.

Growing up watching her grandmother make flour tortillas and her grandpa (the baker in the family) make his empanadas, Leslie developed her love of cooking from an early age and created the lovely blog La Cocina de Leslie as a way to capture both the traditional Mexican recipes and Mexican inspired meals she has made over the years for her family.

Luckily for me, La Cocina de Leslie is my Secret Recipe Club Blog for the month of March. 

I personally know very little about Mexican cooking, but can appreciate, just like French cuisine, that Mexican recipes can differ from state to state and even from region to region.  No matter what part of Mexico they’re from, they all look mouth-wateringly delicious, and as Autumn approaches us here in Australia, I couldn’t move past her recipe for Caldo de Pollo.

I have altered Leslie's original recipe only very slightly, purely to use the seasonal veggies that I had in my weekly veggie box delivery that day.  I also  used a whole chicken rather than pieces as my chicken man only had whole  organic chickens that day.
