Organic Chicken?

Are you a "free-range" chicken or an "organic" chicken buyer?

Once upon a time, if I'm being honest with you, I was not concerned about either.  Now, I'm obsessed for healthy, sustainable food.  I've increased my awareness about what we are eating and where it has come from to the point that I can't turn back or pretend I know nothing about it.

Now, I'm organic all the way!

Yes I hear you, it's a lot more expensive to purchase, however you really don't need to (and probably shouldn't) eat a lot of it, and in fact, a little can go a very long way.  I personally tend to stuff my meals full of veggies, letting the chicken be the guest star instead of the boring old regular - making one single chicken breast last 2-3 meals.

Also, chopped smaller or flattened out, chicken is super quick to cook - perfect for your quick mid-week meal dilemma.  Just like this super tasty recipe I found.....

If you're a lover of chicken and sweet potato, then I really think you'll love this dish because it's packed full of flavour.  The fish sauce adds a delicious saltiness, which combines perfectly with the sweetness of the sweet potato and earthiness of the chicken and coriander.
