KIDS: Strawberry Mousse Part II

Berries are on their way and I'm super excited.  I know you can get them all year round, but there is something a little special about the fresh, in season ones grown locally.  I could OD on them if I was that way incline....hold on a minute, I'm a Taurean!  Obsessive is my basic human nature.

Maybe that also explains why I can't just make the ONE strawberry mousse?  Hunh?

 

 

Strawberry Mousse, Part II

300g strawberries | 500ml cream, whipped | 250g cream cheese, room temperature | 4 tbsp caster sugar | 

12 small portions or 4 larger serves

 

  1. Chop strawberries and then crush with a fork. Set aside.
  2. In an electric mixer, whip together the cream cheese and sugar until soft. Add whipped cream and mix until light and smooth.
  3. Toss in crushed strawberries and mix for a further few seconds until incorporated.
  4. Divide between bowl and chill before serving.

 

For me personally, this one was my preference - less sweet and a more sophisticated texture.  Almost luxurious (if a mousse can be luxurious).  However the verdict is in and Strawberry Mousse Part I is the winner for gorgeous Miss J's 3rd birthday party.
