The Chocolate Cake !

I'm a HUGE lover of cake, and I especially love, love, love birthday cake.  I think the reason being you've already got a smile on your face before you even take the first mouthful.  Maybe it could also be that you HAVE to have a slice.  No excuses.  No guilt.  It would be rude not to! 

If I had to pick my all time favourite cake, it would be a light and fluffy sponge cake with lashings of fresh whipped cream and loaded up with strawberries.  Bliss!

So why do you see a chocolate cake before you.......

....especially as I've mentioned time and time again that I'm not a lover of chocolate cake - I find it way too rich and end up always feeling a little ill after eating it.  Because of this reason I tend to avoid making it, however as it was my brother's birthday (see here) and at the request of my gorgeous niece and nephew - a chocolate cake was made.......

If only all chocolate cakes were like this!  It may look rich and over the top, but I can assure you that it's not.  It's light, fluffy and the addition of cream cheese in the frosting makes it so much more palatable.
