HOW TO: Make Almond Milk

Dairy.  Good or bad?


I've been researching this topic A LOT lately in connection with my thyroid issues.  I'm still not sure how I feel.  Anxious, scared, relieved, curious?


I have, however chosen to ignore all the research when it comes to my daily latte (for now).


So in between the full fat lattes and goats cheese, I've decided to start experimenting.  With nut milks.  I'm not drinking the long life stuff that’s been sitting for weeks/months on the supermarket shelves with added oils and sweeteners, I'm talking about two ingredients.  Organic almonds and filtered water.  That's it!


The process of making any nut milk essentially involves soaking the nuts in water (some researchers say salty water) overnight or for up to two days — the longer you soak the nuts, the creamier the milk will be. 


The reason for soaking the nuts first is that they contain Phytic Acid, which can inhibit the body's ability to absorb nutrients (especially iron and zinc)
